I don’t know what it is about bacon. I swear you could add it to the worst recipe, and it would end up tasting awesome. We usually have bacon two or three times a month, usually at breakfast. I don’t always prepare the bacon for the pancake bites. Lately, I’ve been cheating by purchasing the bags of already cooked and crumbled bacon, but hey, no one here needs to know. If you want to add more flavor, sprinkle some green onions on the top of each pancake bite and serve with a small dollop of sour cream.
In a large mixing bowl, sift together two cups of Bisquick, one-half cup of cornmeal, one teaspoon of baking powder, and one-quarter teaspoon of salt.
In a separate bowl, beat two egg yolks with an electric hand mixer. Mix in one and a half cups of buttermilk, and three-quarter cups of sour cream, mixing until well combined.
Mix the wet and dry ingredients together, being careful not to over mix.
In a small mixing bowl, whip the egg whites until peaks form. Gently fold the egg whites into the batter. Stir in one cup of grated cheddar cheese, and three-quarter cups of crumbled bacon.
To make these bite-size, use a tablespoon to drop the batter onto a greased skillet. Cook pancake bites until brown on both sides. Serve with maple syrup and desired toppings or dips.
