Bisquick Lobster Waffle Sandwich

My kids think of this one as being gross, but will sit down and eat both as long as they are separate from one another.Weird, right? I’ve had my fair share of seafood since being from the EastCoast, so anytime I have the opportunity to go back, this is one of the first things I look forward to eating. Most people think of waffles as being sweet, but not the case in this recipe.

Ingredients
  

Waffles

  • 2 cups Bisquick
  • 1 tsp garlic powder
  • 1 tsp dried parsley
  • cup buttermilk
  • 2 eggs
  • ½ cup sour cream
  • ½ cup vegetable oil

Lobster Mix

  • 2 cups freshly cooked lobster
  • ¼ cup finely chopped celery
  • ½ cup mayonnaise
  • salt and pepper to taste

Instructions
 

Waffles

  • Mix the two cups of Bisquick, one teaspoon of garlic powder, and one teaspoon of dried parsley together in a large bowl and set aside.
  • In another bowl, beat the two eggs, one and a half cups of buttermilk, one-half cup of sour cream, and one-half cup of vegetable oil until well blended.
  • Mix the wet ingredients into the dry, being careful not to over mix.
  • Preheat the waffle iron and lightly grease. Every waffle iron is different, so measure the batter accordingly.
  • Cook each waffle until golden brown and let cool on a paper towel.

Filling

  • Mix approximately two cups of fresh lobster, one-quarter cup of finely diced celery, one-half cup of mayonnaise, and a dash of salt and pepper.
  • Spread evenly in between two waffles. Add some lettuce and a slice of tomato and enjoy!
