Ingredients
  

  • 1 cup Bisquick
  • cup vegetable oil
  • 4 egg white
  • ½ tsp salt
  • ½ cup grated parmesan cheese
  • ½ cup grated cheddar cheese
  • 3 cups zucchini, thinly slices
  • 1 sweet onion (chopped)

Instructions
 

  • Pre-heat the oven to 350 F.
  • Use cooking spray to coat the pan.
  • Combine Bisquick, oil, eggs, and salt in a large bowl
  • Add Parmesan and cheddar cheeses and combine
  • Add the onion and zucchini and combine.
  • Pour the mixture into the pan.
  • Bake for 40 minutes or until golden brown
